Choripan Sandwich: 2 lb. Regular sausage (chorizo)
2 French Baguettes (cut into 4 equal lengths)
Tomato and Onion Salad
Marite's Chimichurri

Soak sausage in water with white vinegar and salt for 20 minutes. Place on medium hot grill and cook for 20 minutes, turning every 5 minutes. Slice tomatoes and onions and place in bowl with salt and olive oil to taste. Slice baguette quarters in half lengthwise and place in bread basket.

Build your Choripan!
Let your guests pick a baguette quarter; add the chorizo, a teaspoon of Marite's Chimichurri and a little tomato salad (optional).
Take a bite !!!

Ensalada Rusa (prepared ahead of time and chilled)
This Argentine adaptation of a Russian salad is extremely popular. You'll find it on the menu as a side dish to any meat entree.

1 cup boiled potatoes
1 cup boiled carrots
1 cup boiled sweet potatoes
1 cup boiled beets
1 cup boiled or steamed peas
3 tablespoons mayonnaise, or to taste
Hard Boiled eggs (sliced)
Salt and pepper to taste

Cook the vegetables. If you prefer, you can use a frozen mix of carrots and peas, or canned beets.
Cut the vegetables into small same-sized cubes. Combine with the mayonnaise, salt and pepper to taste. Add slices of hard boiled egg around the outside of the salad and serve.

Asado

2 lb. of meat- Skirt steak or Flank steak works great and London Broil is delicious!
2 lb. Beef Short ribs
2 lb. Chicken legs - Marinated in Marite's Chimichurri

Place salted meat, chicken and short ribs on the grill rack about 10 minutes after placing sausage for Choripan. Cook until desired doneness. (These meats may also be marinated in Marite's Chimichurri prior to grilling for an amazing taste!)

Serve with a tableside bottle of Marite's Chimichurri, some Ensalada Rusa and enjoy!!

Vegetables:
Great as dressing for sautéed string beans, squash, artichokes and carrot salad.

Seafood:
Great marinade for shish kabob shrimp or scallops, grilled tuna and broiled or baked tilapia or flounder.

Meats:
Pork chops either as marinade or dressing, pork loin, and on a roast beef sandwich as a dressing.

Other:
Flavorful dressing to add to white rice or pasta - Marite's Chimichurri plus a little Parmesan and you're set!
